They emerge from sunny soils, from the dry walls of the narrow streets overlooking the sea, sometimes even on the beaches. Caper s are a typical element of the Mediterranean landscape and therefore of the Italian coasts. From May to late summer the is at the height of life and on the shrub, there are simultaneously buds, fragrant flowers and fruits. What we know as a caper is an unopened bud. If you do not pick it and let the flower bloom then you will have the fruit of the caper (called in Italy also cucuncio) that is edible too. The Ligurian company Frantoio di Sant'Agata d'Oneglia proposes Fruits of Caper preserved in water, salt and vinegar, typical of Liguria, a beautiful region of northern Italy. The fruits of the caper have a more elongated shape and are larger and more y than capers. They are also preserved with the stem which makes them suitable to be eaten as a snack. They are composed of more than 80% of water, and have small but significant percentages of proteins, minerals and fibres. The fruits of the caper are a very tious and precious food to add to cooked dishes.
