Makes 18 flautas (about 4 servings)
INGREDIENTS:
* Kelapo coconut oil for frying + 2 additional tablespoons
* 3 cups cooked and shredded rotisserie chicken
* Seasonings: 1 teaspoon each paprika (regular or smoked) and
garlic powder; 3/4 teaspoon each kosher salt and ground cumin;
1/2 teaspoon chili powder; 1/8 teaspoon cayenne; freshly ground
black pepper, to taste
* 24 corn tortillas, 6 to 7 inches in diameter
* 2 cups crumbled queso fresco cheese DIRECTIONS:
Preheat the oven to 325°F. Fill a Dutch oven or cast iron pot
with a few inches of coconut oil and heat on medium-high until it
reaches 375°F.
While oil heats, melt the additional 2 tablespoons of coconut oil
in a skillet over medium heat. Combine the chicken with all
seasonings in a large mixing , then add to the skillet and
cook until warmed through. Adjust any seasonings to personal
taste.
Cook flautas in batches of 3 to 4 (1 tortilla=1 flauta). Be sure
to return oil to 375°F between batches.
* Warm tortillas to soften in microwave (20 secs) or steamer.
* Roll two tablespoons of chicken mixture sprinkled with crumbled
queso fresco into each tortilla. Secure with a toothpick(s).
* Gently lower rolled flauta into oil with tongs and hold them
gently clamped closed for a moment to help the shell set.
* Cook until very crisp and light golden in color, about 1–2
minutes.
* Shake excess oil back into pan and place cooked flautas to on a
paper-towel lined sheet pan in a warm oven.Serve with sour cream,
salsa, or guacamole, plus your favorite salad for a complete
meal.
